Recipe:
Cauliflower - 1, small
All-purpose flour - 1/2 cup
Corn flour - 1/4 cup
Rice flour - 2 tbsp
Ginger-garlic paste - 2 tsp
Red chilly powder - 3/4 tsp
Salt - to taste
Water - about 3/4 cup
Red food color - a pinch (optional)
Method:
Cut the cauliflower and separate into florets.
If the florets are big, cut them into halves or quarters as desired.
Make a batter with the rest of the ingredients.
Heat oil in a saucepan/kadai.
Dip the cauliflower florets in the batter and deep fry at medium-low until golden brown.
Drain on paper towels.
Serve hot with tomato ketchup or chutney of your choice.
Tips:
- The batter made with the above mentioned amount of water is somewhat loose. If you want the batter to thickly coat the florets, add less amount of water.
- The batter can also be made with the addition of an egg + water.
- The fritters should be made at medium-low temperature for the cauliflower to cook completely. If fried at a high temperature, the outside can burn before the vegetable is cooked.
- Another method to ensure the doneness of the fritters is to cook the cauliflower (atleast partially) in the microwave before dipping in batter and frying.
